I made corned beef today and didn't want to throw away the leftover liquid, so I threw some split yellow peas in and some more vegetables and a couple of chilis and am going to see if it will turn out.

Task was successful.

A little salty because of the corned beef base, but it tastes excellent and will be nice now that the weather has turned cold.

Photos don't do the colour justice. It's a lovely vibrant yellow which is very pleasing on the eye.

Chilis give it a nice tingle on the tongue too.

Big football (rugby league) game on tonight (Queenslander!!!!), so I made a big pot of chili con carne for tacos and nachos. 

Fry some garlic, onion and capsicum in olive oil.

As some sliced chillis

Add the meat (I usually like a mix of diced and ground beef, but went with only ground beef this time.

Add chili spice mix (garlic powder, onion powder, cumin, paprika, cayenne pepper, salt, pepper, coriander)

Cook on high until spices are mixed through and meat is browned.

Add red kidney beans

Cook until beans start to get tender

Add tomato paste and crushed tomatoes.

Add beef stock

Simmer until it's thick and flavours have combined

Weird. I made chili yesterday as well. 
Never sauteed my chilis with the onion - may try it next time. 
I use ground pork.

I often use a mixture of pork and beef like I do for Bolognese. I guess that's the nature of chili is that you use whatever you have at hand. 

I usually add the chillis later too, but they just happened to be there when I was cutting the onion and garlic so I threw them in all together.

They came out with a new kind of apple, no really, I've been getting them lately and they're pretty good. If you see them you should get some so the chuds can't force us back to the old bland cishet types of apples that have ties to capitalism, colonialism and white supremacy.

Made frijoles while working from home today.

Red kidney beans, onion, garlic, salt.

Cooked in the slow cooker/crock pot for about 4 hours on high covered in water.

Transferred to the big saucepan to cook the remaining water off.

Once the beans were nice and soft, I got the stick blender out to break it all down quicker.

Now I am just frying those fuckers down into that lovely thick paste.

Christmas cooking underway. 

Only a small gathering for lunch this year as most family are away. 

Decided to make chicken and lamb yiros.

Marinated in Greek yoghurt with garlic, oregano, salt, pepper, red wine vinegar and olive oil.

Meat is cooking, got Greek lemon potatoes on and some cheeky village sausages on for snacks. 

Made some salads and will eat in a couple hours.
