You act like it's entirely impossible to make a playable demo of an open world game. That's nonsense. It has been done many times, maybe not by Bethesda for every game but they often made preview builds for the press and other developers do it all the time. Of course what Bethesda does (scripted walkthrough video) works too but it's better to have people actually play the game instead.
